Ingredients

For the chocolate mixture

  • 1 cup dark chocolate chips, I used unsweetened
  • 1 tbsp coconut oil

For the filling

  • Strawberry jam
  • 5-6 large strawberries, finely chopped

Instructions

  • In a small bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  • Grease a mini muffin tin or line it with mini cupcake liners. Spoon a thin layer of melted chocolate into the bottom of each cup.
  • Add a small spoonful of finely diced fresh strawberries to each, then top with about 1 teaspoon of strawberry jam.
  • Gently press the strawberry and jam filling down slightly to create an even layer.
  • Pour the remaining melted chocolate over each cup, making sure the filling is completely covered on the top and around the sides.
  • Place the tin in the freezer for at least 2 hours, or until fully set.
  • Once frozen, transfer the cups to an airtight container and store them in the freezer. Enjoy straight from the freezer or let sit for a few minutes to soften slightly before eating.
