Storing
Store the chocolate strawberry jam cups in an airtight container in the freezer for up to 3 months. If you’re stacking them, place a piece of parchment paper between the layers to keep them from sticking together.
When you’re ready to eat
Let the cups sit at room temperature for 2 to 3 minutes before eating so the strawberry filling softens slightly while the chocolate stays perfectly crisp. They’re delicious on their own or served alongside fresh strawberries for an extra-special dessert.


Chocolate Strawberry Jam Cups
Instructions
- In a small bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Grease a mini muffin tin or line it with mini cupcake liners. Spoon a thin layer of melted chocolate into the bottom of each cup.
- Add a small spoonful of finely diced fresh strawberries to each, then top with about 1 teaspoon of strawberry jam.
- Gently press the strawberry and jam filling down slightly to create an even layer.
- Pour the remaining melted chocolate over each cup, making sure the filling is completely covered on the top and around the sides.
- Place the tin in the freezer for at least 2 hours, or until fully set.
- Once frozen, transfer the cups to an airtight container and store them in the freezer. Enjoy straight from the freezer or let sit for a few minutes to soften slightly before eating.
