Chocolate and peppermint are one of those combinations that never get old, especially during the holidays. This Dairy Free Peppermint Fudge is rich, creamy, easy to make, and perfect for gifting, holiday parties, or keeping in the fridge whenever you need a little something sweet.

Ingredients

  • 1 cup coconut oil, melted
  • 1 cup almond butter
  • 1 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 tsp peppermint extract adjust to taste
  • Crushed peppermint candies for topping, optional

Instructions

  • Add the melted coconut oil, almond butter, cocoa powder, maple syrup, vanilla, and peppermint extract to a large bowl. Mix well until a smooth and creamy batter is formed. Taste the mixture and adjust the level of peppermint extract to your preference. Add more if you want a stronger peppermint flavor.
  • Line a small 8x8 square baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  • Pour the mixture into the pan and spread evenly with a spatula.
  • Sprinkle the crushed peppermint candies on top of the fudge. If the candy pieces are too large they may sink so make sure to crush them small.
  • Place it in the fridge and let the fudge set for at least 2-3 hours or until it's firm.
  • Once the fudge is set, use the parchment paper overhang to lift it out of the dish. Place it on a cutting board and cut into small squares. Serve immediately and enjoy!
