Ingredients

For the meatballs

  • 1 lb ground turkey
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 2 tsp dried thyme
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp avocado oil

For the tzatziki sauce

  • 1/4 cup fresh dill, chopped
  • 1 cup plain unsweetened coconut yogurt
  • 1 english cucumber, grated and water squeezed out
  • 1 lemon, juiced
  • 1 tsp minced garlic

For the bowls

  • 1 cup brown rice, cooked
  • 1 english cucumber, cubed
  • 1 red onion, diced
  • 1 pint grape tomatoes, halved

Instructions

  • In a medium bowl, add the coconut yogurt, lemon juice, dill, grated english cucumber, and minced garlic. Add salt and pepper to taste. Place the tzaziki sauce in the fridge until you're ready to serve.
  • In a large bowl, add ground turkey, fresh dill, fresh parsley, dried thyme, onion powder, minced garlic, salt, and pepper. Mix well, then form into about 10 small meatballs.
  • Preheat a large pan over medium-high heat and add the avocado oil. Once hot, add the meatballs and sear on all sides for about 10-12 minutes, until fully cooked through.
  • Serve with chopped cucumber, tomato, brown rice and a fresh squeeze of lemon over everything. Enjoy!
