While the pork cooks, make the pineapple salsa by combining the finely chopped pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Stir well and set aside so the flavors can meld together.
In a separate small bowl, whisk together the sour cream, mayo, lime juice, honey, chili powder, and a pinch of salt until smooth and creamy.
Warm the tortillas in a dry skillet or directly over a gas flame until soft and lightly charred.
Assemble the tacos by filling each tortilla with the pork, topping with the fresh pineapple salsa, and finishing with a generous drizzle of the chili lime crema. Serve immediately with extra lime wedges if desired.
