Storing

Ground Pork Tacos With Pineapple Salsa
Ingredients
- 1 lbs ground pork
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 3 cloves garlic, minced
- 1 tsp soy sauce
- 1/4 cup pineapple juice
- 1/2 lime, juiced
- Flour or corn small tortillas
For the salsa (all finely chopped)
- 1 cup pineapple
- 1/4 red onion
- 2 jalapeño
- 1/3 cup cilantro
- 1/2 lime, juiced
- Pinch of salt
For the chili lime crema
- 1/2 cup sour cream
- 1 tbsp mayo
- 1 lime, juiced
- 2 tsp honey
- 1 tsp chili powder
- Pinch of salt
Instructions
- Heat a large skillet over medium heat. Once hot, add the ground pork and break it apart with a spatula as it cooks. When it's about halfway cooked, stir in the minced garlic, chili powder, smoked paprika, cumin, oregano, garlic powder, salt, and pepper. Mix until well incorporated.
- Stir in the soy sauce, pineapple juice, and the juice of ½ lime. Let everything simmer for about 5 more minutes, until the liquid slightly reduces and the pork is fully cooked.
- While the pork cooks, make the pineapple salsa by combining the finely chopped pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Stir well and set aside so the flavors can meld together.
- In a separate small bowl, whisk together the sour cream, mayo, lime juice, honey, chili powder, and a pinch of salt until smooth and creamy.
- Warm the tortillas in a dry skillet or directly over a gas flame until soft and lightly charred.
- Assemble the tacos by filling each tortilla with the pork, topping with the fresh pineapple salsa, and finishing with a generous drizzle of the chili lime crema. Serve immediately with extra lime wedges if desired.
