This Chocolate Peanut Butter Protein Mousse blends silken tofu, dark chocolate, cocoa powder, protein powder, peanut butter, and PB Fit into a rich, creamy dessert that's packed with protein. It's an easy no-bake recipe with a smooth, fudgy texture that makes the perfect healthier treat.
Add the chocolate and coconut oil to a small microwave safe bowl. Microwave in 30 second intervals, stirring between each, until fully melted and smooth. Set aside to cool slightly.
In a blender or food processor, combine the tofu, melted chocolate mixture, maple syrup, protein powder, cacao powder, vanilla, PB Fit, and a pinch of salt.
Blend for about 1 minute, scraping down the sides as needed, until completely smooth and thick with a mousse like texture.
To assemble, drizzle a little peanut butter into the bottom of each dessert cup. Spoon the chocolate peanut butter mousse on top, then finish with a dollop of whipped cream.
