Ingredients

  • 14 oz Silken tofu
  • 1 tbsp maple syrup
  • 1.5 oz of dark chocolate
  • 1/2 tbsp coconut oil
  • 1 scoop of chocolate or vanilla protein powder
  • 2 tbsp cocao powder or unsweetened cocoa
  • 1 tsp vanilla
  • 1 tbsp PB Fit powder
  • Pinch of salt
For the topping
  • Drizzle of creamy peanut butter
  • Cool whip

Instructions

  • Add the chocolate and coconut oil to a small microwave safe bowl. Microwave in 30 second intervals, stirring between each, until fully melted and smooth. Set aside to cool slightly.
  • In a blender or food processor, combine the tofu, melted chocolate mixture, maple syrup, protein powder, cacao powder, vanilla, PB Fit, and a pinch of salt.
  • Blend for about 1 minute, scraping down the sides as needed, until completely smooth and thick with a mousse like texture.
  • To assemble, drizzle a little peanut butter into the bottom of each dessert cup. Spoon the chocolate peanut butter mousse on top, then finish with a dollop of whipped cream.
  • Chill for 30 to 60 minutes for a thicker texture. Store in an airtight container in the fridge and enjoy for up to 4-5 days.
