Loaded Sweet Potato Fries

Crispy sweet potato fries piled high with seasoned ground beef and melty cheese make this an easy dinner everyone will want on repeat. These Loaded Sweet Potato Fries are hearty, packed with protein, and the perfect balance of smoky, savory, and cheesy comfort food with a fun twist.

Ingredients

  • 1 lb ground beef
  • 1/2 tbsp chili powder
  • 2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 onion, diced
  • 2 tbsp tomato paste
  • 1/4 cup beef stock
  • 6 oz shredded cheddar jack cheese
  • Green onions, thinly sliced
  • Sweet & hot jalapenos, optional
  • Avocado oil spray or any oil

For the sweet potatoes

  • 2 large sweet potatoes, cut into fries
  • Generous sprinkle of salt, pepper, garlic powder, onion powder, and paprika
  • 1 tbsp avocado oil

Instructions

  • Preheat the oven to 400℉
  • Cut the sweet potatoes into a fry shape and add to a large bowl. Add the avocado oil and the sweet potato fries seasoning. Mix well.
  • Spread the sweet potatoes evenly on a lined baking sheet. Place in the oven and bake for about 20-25 minutes until soft and can be pierced easily with a fork.
  • Meanwhile, preheat a large pan to medium heat.
  • Once hot, add a light spray of the avocado oil and diced onions. Saute for a few minutes until translucent.
  • Add the ground beef to the pan and cook for 8-10 minutes, stirring occasionally, until fully cooked.
  • Once cooked, add the tomato paste, beef stock, and seasonings. Mix well and simmer on low for a few more minutes to let it thicken and the flavors come together.
  • Once the sweet potatoes are out of the oven, add the beef mixture in an even layer over them. Sprinkle with as much cheese as you'd like on top and place back in the oven for 5-6 more minutes until the cheese is nice and melty!
  • Serve immediately with freshly sliced green onions. I also liked adding the sweet heat jalapenos on top; this is totally optional but highly recommended!!
