Ingredients

  • 2 cups rolled oats
  • 4 eggs
  • 1/4 cup vanilla protein powder
  • 2 cups unsweetened almond milk
  • 1 1/2 tsp vanilla extract
  • 2 large ripe bananas
  • 1 cup frozen mixed berries
  • 1/4 cup maple syrup
  • 1 tsp lemon zest optional

Optional toppings

  • Fresh strawberries
  • Fresh blueberries
  • Fresh raspberries
  • Greek yogurt
  • Chopped pecans

Instructions

  • Preheat oven to 350
  • Add 2 cups rolled oats & 1/4 cup vanilla protein powder to a large mixing bowl and set aside.
  • In a separate bowl, add all the eggs, almond milk, vanilla extract, lemon zest, and maple syrup. Mix well.
  • Once combined add in your wet mixture to the dry mixture along with 2 large ripe bananas (smashed) and mix.
  • Then add in 1 cup frozen berries and mix. (I used a frozen berry mix from Costco)
  • Add to a greased baking pan and top with fresh berries and chopped pecans. Bake for about 35-45 min. The timing of the bake will depend on how large the pan is. Mine was smaller so it took about 45-50 min, if you use a larger pan it will cook faster, so keep an eye on it!
  • Once it's baked you can let it cool, then cut into 6 large pieces. I topped mine with plain Greek yogurt for some extra protein! Store leftovers in the fridge to have for breakfast the next few days! Enjoy!
