Why I Love This Recipe
This baked protein oatmeal is one of my favorite healthy breakfast meal prep recipes because it’s filling, naturally sweet, and packed with nutrients. Rolled oats are mixed with ripe bananas, eggs, almond milk, vanilla protein powder, and maple syrup, then baked with juicy berries for a soft, cake-like texture. Topped with fresh fruit, chopped pecans, and creamy Greek yogurt, this baked oatmeal is a delicious, high-protein breakfast that’s perfect for busy mornings and easy meal prep.

This Baked Oatmeal is a perfect make-ahead breakfast that’s filling, high in protein, and easy to enjoy throughout the week.
Storing:
Store the baked oatmeal in an airtight container in the refrigerator for up to 4–5 days. For longer storage, you can also freeze individual portions for up to 2 months. Keep toppings like Greek yogurt and fresh fruit separate until ready to serve for the best texture and flavor.
Reheating:
To reheat, warm individual slices in the microwave for 30–60 seconds until heated through, or in the oven at 350°F for about 10 minutes. Top with Greek yogurt, fresh berries, and chopped pecans just before serving.

Protein Berry Oatmeal Bake
Ingredients
- 2 cups rolled oats
- 4 eggs
- 1/4 cup vanilla protein powder
- 2 cups unsweetened almond milk
- 1 1/2 tsp vanilla extract
- 2 large ripe bananas
- 1 cup frozen mixed berries
- 1/4 cup maple syrup
- 1 tsp lemon zest optional
Optional toppings
- Fresh strawberries
- Fresh blueberries
- Fresh raspberries
- Greek yogurt
- Chopped pecans
Instructions
- Preheat oven to 350
- Add 2 cups rolled oats & 1/4 cup vanilla protein powder to a large mixing bowl and set aside.
- In a separate bowl, add all the eggs, almond milk, vanilla extract, lemon zest, and maple syrup. Mix well.
- Once combined add in your wet mixture to the dry mixture along with 2 large ripe bananas (smashed) and mix.
- Then add in 1 cup frozen berries and mix. (I used a frozen berry mix from Costco)
- Add to a greased baking pan and top with fresh berries and chopped pecans. Bake for about 35-45 min. The timing of the bake will depend on how large the pan is. Mine was smaller so it took about 45-50 min, if you use a larger pan it will cook faster, so keep an eye on it!
- Once it’s baked you can let it cool, then cut into 6 large pieces. I topped mine with plain Greek yogurt for some extra protein! Store leftovers in the fridge to have for breakfast the next few days! Enjoy!
