Teriyaki Salmon Bowls

This teriyaki salmon bowl is a protein-packed meal with baked salmon glazed in savory teriyaki sauce. It’s served over brown rice with edamame, cucumber, avocado, and green onions, finished with a drizzle of sriracha mayo.

Ingredients

  • 1.5 lbs salmon
  • 1/2 cup store-bought teriyaki sauce
  • 1 tbsp minced garlic
  • 2 cups brown rice, cooked
  • 1 cup edamame
  • 1 cucumber
  • 2 avocados
  • 1 bunch green onions
  • 2 tbsp mayo
  • 2 tbsp sriracha

Instructions

  • Preheat your oven to 400℉ degrees.
  • Start cooking your brown rice according to package instructions.
  • In a bowl, combine 1 tbsp minced garlic and 1/2 cup of teriyaki sauce. Brush this over your entire salmon until fully coated.
  • Add to a baking sheet and bake for about 10-12 minutes, until the salmon is cooked through and flakes easily. The cook time will depend on the thickness of your salmon.
  • Now it's time to assemble the bowls. Add in about 6 oz of salmon, some brown rice, edamame, sliced cucumber, sliced avocado, chopped green onions, and some sriracha mayo!
  • The sriracha mayo is optional. To make it, combine equal parts mayo and sriracha. Enjoy!
