Enjoying The Leftovers

If you have leftovers, store the skewers and blueberry balsamic glaze separately for the best texture. They’re just as delicious the next day and make a fresh snack or light lunch. The extra glaze is also amazing drizzled over grilled chicken, burrata, salads, or roasted vegetables.

Storing

Store the assembled caprese sticks in an airtight container in the refrigerator for up to 2 days. Keep the blueberry balsamic glaze in a separate airtight container in the refrigerator for up to 1 week and drizzle it over the skewers just before serving.

When you’re ready to eat

Serve chilled or at cool room temperature with the blueberry balsamic glaze drizzled over the top or on the side for dipping. Finish with flaky salt and freshly cracked black pepper just before serving for the best flavor.

Caprese Sticks with Homemade Blueberry Balsamic Glaze

Fresh mozzarella, juicy tomatoes, and basil come together in these easy Caprese Sticks with a homemade blueberry balsamic glaze that's sweet, tangy, and full of fresh flavor. This simple appetizer is perfect for entertaining, holiday parties, summer gatherings, or anytime you need an elegant bite that's quick to assemble.

Ingredients

  • 8 oz mozzarella pearls
  • 12 oz sugar bombs tomatoes
  • Fresh basil
  • 1 cup frozen blueberries
  • 1/2 cup balsamic vinegar
  • 1 or 2 tsp honey
  • Pinch of salt

Instructions

  • Add the blueberries and balsamic vinegar to a small saucepan over medium heat.
  • Bring to a low boil, then reduce heat and let it simmer for about 10–15 minutes, stirring occasionally, until the mixture thickens slightly.
  • Use a fork or the back of a spoon to mash the blueberries a bit while it simmers.
  • Once thickened, add the honey and salt. Mix well, then remove from the heat and let it cool.
  • Meanwhile, prepare the skewers by adding one tomato, a mozzarella ball, and basil to each stick. Add to a serving platter and set aside.
  • Once the blueberry glaze has set, pour it through a mesh sieve to remove all the large chunks, letting all the glaze through to a bowl below.
  • Drizzle over the caprese sticks and serve immediately!
