Why I Love This Recipe
If I need an appetizer I know everyone will love, this is usually the first thing I make. It’s inspired by all the flavors of Mexican street corn, with sweet corn, tangy Greek yogurt, sour cream, cotija cheese, fresh lime, and just enough smoky spice to keep everyone coming back for another scoop. It comes together in minutes and is just as good with tortilla chips as it is spooned onto tacos or grilled chicken.
Enjoying The Leftovers
Leftovers are just as versatile as they are delicious. Scoop it up with chips, spoon it onto tacos, burgers, grilled chicken, or burrito bowls, or use it as a spread for wraps and sandwiches. The flavors get even better after a few hours in the fridge.
Storing
Store the dip in an airtight container in the refrigerator for up to 4 days. Give it a quick stir before serving since a little liquid may separate as it chills.
When you’re ready to eat
Serve chilled or slightly cool with tortilla chips, fresh vegetables, crackers, or pita chips. Finish with an extra sprinkle of cotija cheese, cilantro, chili powder, and a squeeze of fresh lime for the best presentation and flavor.


Street Corn Dip
Ingredients
- 4 cups corn fresh, frozen, or canned
- 1/2 cup plain greek yogurt
- 1 tbsp mayo
- 1/3 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp honey
- 2 jalapeños, finely diced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp water to thin
Instructions
- If using frozen corn, defrost according to package instructions.
- Mix all prepped ingredients into a large bowl, then top with extra cilantro and cojita cheese. Optional: add a few dashes of hot sauce or Tajin on top before serving!
