Why I Love This Recipe
Fresh pineapple salsa is one of those recipes that instantly makes any meal taste brighter. I love the combination of juicy pineapple, crisp bell pepper, red onion, and jalapeño because every bite has the perfect balance of sweet, spicy, and tangy flavors. Adding creamy avocado right before serving makes it even better by mellowing the heat and giving the salsa a rich, buttery texture. It comes together in just a few minutes, and it’s incredibly versatile. Whether I’m scooping it up with tortilla chips or piling it onto tacos, grilled chicken, fish, or shrimp, it always adds the freshest pop of flavor.
Enjoying The Leftovers
This salsa is just as delicious the next day and is a great way to add fresh flavor to leftover meals. Spoon it over grilled chicken, salmon, shrimp, tacos, or rice bowls, or enjoy it as an afternoon snack with tortilla chips. If you’ve already added the avocado, it’s best enjoyed within a day for the freshest texture.
Storing
Store the salsa in an airtight container in the refrigerator for up to 3 days. If you’re planning to make it ahead, wait to add the avocado until just before serving to keep it from browning and to maintain the best texture.
When you’re ready to eat
Serve chilled with tortilla chips, pita chips, or fresh vegetables for an easy appetizer. It’s also delicious spooned over grilled chicken, fish, shrimp, tacos, burgers, or grain bowls. Finish with an extra squeeze of fresh lime and a sprinkle of cilantro right before serving for the freshest flavor.
