Why I Love This Recipe
This matcha chia pudding is one of my favorite healthy breakfast recipes because it’s creamy, energizing, and packed with nutrients. Chia seeds are blended with coconut milk, maple syrup, vanilla, coconut yogurt, and matcha powder, then chilled overnight for the perfect thick, pudding-like texture. Topped with fresh berries, shredded coconut, and an extra dollop of yogurt, this matcha chia pudding is a refreshing, antioxidant-rich breakfast that’s easy to prep ahead and enjoy anytime.
Enjoying The Leftovers
This Matcha Chia Pudding is a quick, make-ahead breakfast that stores beautifully in the fridge for easy grab-and-go meals.
Storing:
Store the prepared chia pudding in an airtight jar or container in the refrigerator for up to 4–5 days. Keep toppings like strawberries, raspberries, shredded coconut, and extra coconut yogurt separate until ready to serve to maintain freshness and texture.
When you’re ready to eat:
Just stir well and enjoy chilled straight from the fridge. If it thickens too much, you can loosen it with a splash of coconut milk before serving.
