High Protein S’mores Pudding
Ingredients
- 1 oz box of sugar-free chocolate pudding mix
- 2 cups Fairlife chocolate milk
- 1/2 cup plain greek yogurt
- 1/2 cup chocolate protein powder or marshmallow protein powder
- 8 oz zero-sugar cool whip
Graham crackers of choice toppings for serving
- Marshmallow fluff
- Dark chocolate chips
- Graham crackers, crumbled
Instructions
- In a large bowl, whisk together the chocolate milk and pudding mix according to the package directions. Let it chill in the fridge for about 5 minutes, until soft set.
- Once the pudding is set, gently mix in the protein powder until smooth. Then fold in the Greek yogurt until fully combined.
- Add about 6–8 graham crackers to a zip-top bag and crush into small pieces.
- Grab 4 small jars or containers. Add about ¼ cup of crushed graham crackers to the bottom of each, pressing down to form a base.
- Add a layer of pudding mixture, followed by a layer of Cool Whip, and then another layer of pudding.
- If meal prepping, stop here, seal with airtight lids, and store in the fridge for up to a week. (but it tastes best if eaten within the first 3-5 days!)
- When ready to serve, top with marshmallow fluff, dark chocolate chips, and extra crushed graham crackers. Enjoy!
